About the Recipe
One of the ~many~ things I cut out when diagnosed with advanced cancer was nightshades due to their inflammatory effects.
This meant eggplant, capsicum and tomato 😟
My goal was to reduce inflammation as much as possible and avoid blood sugar spikes (hence the low carb and sugar free angle).
Turns out you can make a really delicious anti inflammatory NOMATO sauce out of just the above ingredients (plus some organic vegetable stock).
It’s so quick and easy and will make your gut happy 😊
Great for (low carb of course) pasta 🍝, pizza base, on toast, mixed through cooked veg and on and on and on…
