Kicking off the new year with a nutritious, quick and super tasty peanut butter lime bowl 🎉
It’s really all about the dressing, use whatever veg you like! Something crunchy, and some protein and good fats 🤗 I used shredded cabbage this time, but ice burg lettuce works really well with this dressing 🥰

Ingredients
Ingredients:
Salad:
Shredded iceberg lettuce (preferred) or cabbage
carrots
Cucumber
Spring onion
Fresh herbs (parsley, coriander or mint)
Fresh lime and sesame seeds to serve
Grilled tofu
Avocado
Dressing:
2 Tbs peanut butter
1 Tbs tamari
Juice of 1 lime
2 tsp fresh ginger (finely grated)
1 clove garlic, minced
1 tsp sesame oil
Water to thin
Salt and pepper to taste
Preparation
Simply mix your dressing ingredients together, taste and season accordingly. You may need extra lime juice.
Stir through your salad and top with tofu, avocado, herbs and seeds.
