Quick, fresh & crunchy! This BLT (without the t hehe) is the perfect healthy lunch 😍
My vegan bacon is super quick to put together and a great one to keep in the fridge on hand.
You can of course use any fresh vegetables you like! If tomato works for your diet a couple of fresh slices here, or some cucumber would also be great. I’ve added sliced avocado to mine for some extra healthy fats and vitamins.

Bacon:
Block of firm tofu, drained/pressed/sliced
2 Tbs tamari
1 Tbs maple
1 Tbs apple cider vinegar
1 tsp liquid smoke (if you can’t get, omit and add extra smoked paprika)
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp black pepper
Yoghurt Sauce
1/4 cup coconut yoghurt
1 tsp dried dill (or any other preferred herbs)
Juice of half a lemon
1 spring onion, finely diced
Salt and pepper to taste
Preparation
Step 1 :
Mix ingredients together and marinate for at least 20 minutes.
Step 2:
Grill your slices on a hot pan in a little oil when ready and store the rest in an airtight container in the fridge.
Step 3:
Mix Yoghurt ingredients together in small bowl, taste and season.
To serve:
Iceberg lettuce leaves
Fresh sliced vegetables: avocado, cucumber
