Cassava flour waffles are gluten-free, crispy on the outside, and soft on the inside. Made from nutrient-rich cassava root, they offer a delicious and healthy alternative to traditional waffles.

1 cup cassava flour
1/4 cup arrowroot starch or tapioca flour
3/4 teaspoon baking soda
1⁄2 teaspoon sea salt
1/4 teaspoon cinnamon and a dash of mace, optional
21⁄2 teaspoons apple cider vinegar
2 tablespoons honey
1⁄2 cup melted coconut oil
1⁄2 cup avocado oil
131⁄2 oz. can full-fat organic coconut milk
1 tablespoon alcohol-free vanilla extract
Preparation
SPECIAL EQUIPMENT NEEDED: Waffle maker
Preheat your waffle maker.
Add all the dry ingredients to a large bowl. Whisk well to combine. With a stand or hand mixer, mix together the wet ingredients. Add the dry ingredients to the wet ingredients and mix just until combined. When your waffle maker is hot, add about 1⁄2 cup of the batter to it. Cook for approximately 5-6 minutes.
Serve hot with fresh fruit, maple syrup, or whipped coconut cream.
