Your new favourite dressing is right here 💕 this bowl is packed with fresh greens, grilled tofu and of course the most gorgoues creamy pesto dressing that so happens to be:

You can of course use any of your favourite veg and protein in the bowl! This one is full of vitamins, antioxidants and all the things to make your cells happy without the blood sugar spike 🤗

Ingredients
Salad:
Fresh baby spinach
Cucumber, sliced
Kalamata olives
Avocado
Grilled tofu
Toasted almond, basil leaves and extra virgin olive oil to serve
Creamy Pesto Dressing
2 Tbs good oil pesto (you can simply blitz your own out of basil, nuts, garlic, olive oil, lemon if you cannot source a healthy one)
150g silken tofu, drained
Juice of 1 lemon
1 -2 Tbs extra virgin olive oil
Salt and ground white pepper to taste
Preparation
Blitz your ingredients together and season generously. Taste and adjust as needed.
I like to double the dressing and keep some in the fridge. Will keep for a few days and great for lunches!
