Ingredients
All you need:
360 - 400g enoki mushrooms
1 spring onion, finely chopped
3 garlic cloves, minced
3 Tbs tamari
2 Tbs avocado oil
1 tsp sesame oil (optional)
1/2 tsp sweetener (I use monk fruit)
Enough hot vegetable stock to cover mushrooms
Preparation
To make:
1. Cut the bottom off your mushrooms. Soak your mushrooms in hot organic vegetable stock for 5-10 minutes, gently pulling them apart.
2. In a small saucepan place avocado oil and sesame oil and warm on medium. Add your garlic just for 10 seconds to infuse flavour (not looking to brown it), then quickly add the tamari, sweetener, spring onion. Turn off heat and stir.
3. Drain the mushrooms and serve with the sauce poured over the top. Serve with sesame seeds on top.
