Buttery, sweet carrots that pair perfectly with a variety of savory dishes!

Ingredients

8 carrots, peeled and cut into 1/4-inch coins
1/4 cup coconut oil
1/4 cup coconut sugar
1/4 teaspoon salt
Preparation
Place carrots in a saucepan and fill with water until carrots arecompletely covered.
Boil carrots over medium heat for 15 minutes or until they can be easily pierced with a fork, then drain and set aside.
Add coconut oil to the saucepan and melt over low heat.
Once melted, add coconut sugar and salt and whisk until a caramel- like consistency is reached.
Add carrots back to the saucepan and coat with mixture. Serve immediately.
