Lupin flour pasta this one is for the pasta lovers out there who, like me, also love to keep their blood sugar steady. Plus lupin is packed with protein!
Low carb Gluten and dairy free and if you don’t have a pasta roller just use a rolling pin and baking paper then slice it up rustic style.

150g lupin flour
25g tapioca flour
25g almond flour
1/2 tsp xantham gum
1/2 tsp salt
3 eggs (room temp) or you can use water or flax eggs for vegan friendly
Preparation
Step 1
Mix your dry ingredients and make a well in the center.
Step 2
Whisk your eggs lightly and add to center.
Step 3
Use a fork to gradually combine the wet and dry together, turning out onto the bench to combine with hands.
Step 4
Knead until smooth (approx 5 minutes).
Step 5
Wrap and rest for 30 minutes.
Step 6
Roll out with pasta roller or rolling pin, and boil in salted water for just 2 minutes - it will cook VERY fast so have your colander ready!
