Packed with good fats and vitamins, it’s gluten free, dairy free, vegan, anti inflammatory and just really bloody tasty. This is one to add to the books.

Ingredients
Ingredients
1 cup finely chopped mushrooms
1 cup grated zucchini (squeeze out the excess water)
1 cup crumbled firm tofu
1/2 cup lupin flakes
1/4 cup nutritional yeast
1/4 cup finely chopped walnuts
2tbs ground flaxseed mixed with 6tbs water (flax egg) OR 1 egg for non vegan
2 cloves minced garlic
1 small onion, diced
1 tsp each dried oregano, dried basil, smoked paprika
Salt and pepper
Preparation
Step 1
Mix flaxseed with water and sit for 10-15 to make a flax egg.
Step 2
In a pan cook the onion and garlic until soft.
Step 3
Add to bowl with the rest of ingredients including the flax egg or real egg.
Step 4
Mix with hands, if too add more lupin or nutritional yeast.
Step 5
Form into balls and cook in either pan or air fryer - be very gentle and wait until they are well cooked on each side before turning.
