About the Recipe

Packed with good fats and vitamins, it’s gluten free, dairy free, vegan, anti inflammatory and just really bloody tasty. This is one to add to the books.

Ingredients

Ingredients


  • 1 cup finely chopped mushrooms

  • 1 cup grated zucchini (squeeze out the excess water)

  • 1 cup crumbled firm tofu

  • 1/2 cup lupin flakes

  • 1/4 cup nutritional yeast

  • 1/4 cup finely chopped walnuts

  • 2tbs ground flaxseed mixed with 6tbs water (flax egg) OR 1 egg for non vegan

  • 2 cloves minced garlic

  • 1 small onion, diced

  • 1 tsp each dried oregano, dried basil, smoked paprika

  • Salt and pepper

Preparation

Step 1


Mix flaxseed with water and sit for 10-15 to make a flax egg.



Step 2


In a pan cook the onion and garlic until soft.



Step 3


Add to bowl with the rest of ingredients including the flax egg or real egg.



Step 4


Mix with hands, if too add more lupin or nutritional yeast.



Step 5


Form into balls and cook in either pan or air fryer - be very gentle and wait until they are well cooked on each side before turning.
