1 large English cucumber, skinned and finely diced

1⁄2 cup red or yellow onion, finely diced
1/4 cup cilantro, finely chopped, plus more for garnish
1/4 teaspoon dried cilantro
1⁄2 teaspoon garlic powder
1⁄2 teaspoon onion powder
1⁄2 teaspoon sea salt
Preparation
2 tablespoons fresh lime juice
Place all vegetables and seasonings in a medium-sized bowl. Add salt and lime juice to the bowl and mix until combined. For best results, let sit in the refrigerator for an hour or two for the flavors to meld.
Top with additional cilantro and serve cold with tacos, fish, or grain-
free tortillas.
