2 ripe bananas
I cup rolled oats
1/4 cup plumped raisins (see Plumped Fruit recipe, page 45)
1/4 cup chopped dates
I teaspoon permitted sweetener (optional)
Preparation
Directions
1. Preheat oven to 350°F.
2. Mash the bananas into a puree using the back of a fork.
3. Add remaining ingredients and mix well.
4. Lay a piece of unbleached parchment paper on an oven-safe dish. Drop by spoonfuls onto parchment paper, leaving space between each cookie.
5. Bake for about 15 minutes.
Note
These cookies are fragile. Smaller cookies will stay together more easily.
