  • 2 ripe bananas

  • I cup rolled oats

  • 1/4 cup plumped raisins (see Plumped Fruit recipe, page 45)

  • 1/4 cup chopped dates

  • I teaspoon permitted sweetener (optional)

Preparation

Directions


  • 1. Preheat oven to 350°F.

  • 2. Mash the bananas into a puree using the back of a fork.

  • 3. Add remaining ingredients and mix well.

  • 4. Lay a piece of unbleached parchment paper on an oven-safe dish. Drop by spoonfuls onto parchment paper, leaving space between each cookie.

  • 5. Bake for about 15 minutes.


Note


  • These cookies are fragile. Smaller cookies will stay together more easily.
