Mushrooms really are the GOAT of nutrient rich vegetables. Containing B vitamins, Vitamin D, potassium ,rich in antioxidants, anti inflammatory and great for the blood sugar and overall gut health 😎💕
Pumpkin and a Fennel Stuffed Mushroom ^
Sauté and soften diced onion, minced garlic (2-3 cloves) until soft. Add in diced fennel (1 small - medium sized fennel), 1 grated zucchini, half cup crushed walnuts, dried herbs (I used rosemary and thyme but sage would also be great), season. Add in approx half cup organic vegetable stock, turn to low and simmer until soft. Add in about half cup cooked pumpkin (mash it up so it’s purée first) and quarter cup nutritional yeast. Mix up and fill your mushrooms!
Bake in oven then top with extra parsley, lemon zest and drizzle with olive oil 💕🫶❤️
